RECIPE: Vegan Chocolate Bourbon Pecan Pie

I was instantly sold on this pie as soon as I saw the word, “bourbon.” There’s nothing better than some bourbon and chocolate at the end of a long day with a cranky kid. All that deliciousness in a pie? Bring it on, baby! (note: I got the recipe from this cookbook)

Ingredients:
egg replacer/substitute; equal to two eggs (I used a total of 6 tbsp of applesauce; 3 tbsp for each egg replacer)
2 tbsp molasses
1/2 cup corn syrup
2 tbsp Jack Daniels bourbon
1 tsp vanilla extract
1/8 tsp salt
1 1/2 cup pecans, chopped
1 cup chocolate chips
4 whole pecans
1 vegan pie crust (I used a ready made crust. Check the ingredients to make sure it’s vegan)

Directions:
Preheat oven to 350 degrees. In a large bowl, mix together the egg replacer, molasses, corn syrup, bourbon, vanilla, and salt. Add the chopped pecans and chocolate chips. Mix together well.
Pour into a pie crust and arrange the 4 whole pecans in the center of the pie as decoration. Bake pie for 40-45 minutes.
