One of my favorite liqueurs for summertime is Limoncello. It’s very refreshing and goes beautifully with many fruity-flavored cocktails. Plus, if you are feeling fancy and want to take it to the next level, you can make your own Limoncello pretty easily; and you will impress EVERYONE. 🙂 So, with that being said…Meloncello, anyone?
2 cups of cubed, seedless watermelon
5 ounces of Limoncello
1 ounce of light rum
2 lemon wheels
Chill 2 rocks glasses in the freezer. Meanwhile, blend the watermelon cubes until they are smooth and juicy. Next, fill your chilled glasses with ice and add the watermelon juice, Limoncello and rum. Top off your cocktail with club soda, to make it bubbly. Garnish each with a lemon wheel and sip away the heat of the day.
