Low-Carb Peanut Sandwich Bread

I’ve been eating low-carb lately and I really miss my bread. I did the happy dance when I came across this recipe for low-carb bread but I was also hesitant because I wasn’t sure how this would really turn out. Things can look so easy on Pinterest and then turn out to be a disaster!

This bread really satisfies and is perfect for sandwiches, which I’ve been missing so much. Since the bread doesn’t rise too high, the slices are small so 2 pieces equals about half a sandwich. Who cares though, right? It’s bread we “low-carbers” can eat…hooray! It’s amazing to eat on it’s own as well. You can even add a packet or two of sweetener to the batter and make muffins out of the dough. This is a very easy recipe to put together – I hope you enjoy it!

1 cup natural peanut butter, smooth
3 eggs
1 Tablespoon vinegar
1/2 teaspoon baking soda
1/4 teaspoon salt

Blend peanut butter and eggs until smooth. Add in remaining ingredients. Pour into a sprayed loaf pan and smooth the top. Bake at 350 degrees for 30-35 minutes.

Let cool before slicing. Enjoy!
