Fall is right around the corner! That means it’s time to get ready for apple season. A few years ago I posted a Crock Pot Apple Cake recipe that went nearly viral. I hope this one is shared just as much because it’s low in fat, so easy to make, and one the whole family will enjoy. Crock Pot Walnut-Stuffed Glazed Apples come out tender (but not mushy) and will have your entire house smelling like a bakery (or apple farm).
Serve these apples warm from the crock pot with low-fat frozen yogurt, ice cream, or side of low-fat coffee cake. Any apple variety does the trick but my favorites are Golden Delicious and Granny Smith. Enjoy!
1/2 cup walnuts (coarsely chopped)
3 Tablespoons dried currants or raisins (optional)
2 1/2 Tablespoons brown sugar
1/2 teaspoon ground cinnamon (divided)
4 Medium apples (any variety)
1 cup brown sugar (packed)
3/4 cups apple cider or juice
Combine first ingredients in a small bowl; add 1/4 teaspoon cinnamon, stirring to combine.
Remove upper 1/4 of apples and core.
Place apples in 3 to 4 quart crock pot. Spoon walnut mixture into cavity of each apple.
Combine the remaining 1/2 teaspoon cinnamon, 1 cup brown sugar, and apple cider/juice in a small bowl, stirring to combine. Pour over apples.
Cover with lid; cook on LOW 2 hours.
Spoon 1/4 cup cooking liquid over each serving.
Garnish with additional walnuts and brown sugar.
