I’ll just get to the point. Being lactose intolerant sucks. I could never live without things like cheese and sometimes suffer so I can indulge in an ice cream cone craving. What’s so great about these popsicles are that they’re dairy free and vegan. Finally, we can enjoy something as delicious as an orange creamsicle without the ill effects. Woo hoo!
1 1/2 cups orange juice
1 cup coconut milk
3 tablespoons agave nectar
¼ teaspoon orange extract (optional)
½ teaspoon vanilla extract
In a medium bowl, whisk all ingredients together. Pour mixture into popsicle molds (I used 5 oz Dixie cups which worked great).
Let set for one hour, then add popsicle sticks. Freeze for 6 hours or overnight. When you’re ready to serve, run some warm water along your popsicle mold to loosen the popsicles and serve immediately.
