My daughter and I made this the other day and it turned out better than I thought it would. My 4-year-old approves too. There were lots of finger dips and licking of spoons as we made it.
This is a great treat to make with your kids, and it’s lactose free and vegan. I find it even better than the dairy-free ice cream I’ve gotten in stores. Get your spoon ready!
2 (14 0unce) cans full fat coconut milk
2/3 cup turbinado sugar (or granulated sugar)
1 1/4 cups natural peanut butter
2 tsp. vanilla extract
1 cup dairy-free chocolate chips (I use Enjoy Life or carob chips)
Put the above ingredients, except the chocolate chips, into a blender or mixer. Mix until it’s smooth and creamy. Pour mixture into a large container with a tight fitting lid. Fold in the chocolate chips and let sit in the freezer for 3-6 hours or overnight.
Scoop into bowls and sprinkle with chocolate chips or your favorite topping, if desired.
