A few weeks ago, my friend Donna’s husband, Bert, made us two different strawberry gimlets to try – one with basil and one with mint. I L-O-V-E-D the mint one and am excited to share this delicious recipe with you all.
Strawberry Mint Gimlet
− 3 to 4 fresh strawberries, hulled and sliced
− 1 1/2 tablespoons of *Simple Syrup
− 2 ounces of vodka
− 1 1/2 tablespoons of lime juice
− Sprig of fresh mint
− 1 cup sugar
− 1 cup water
*Pour water and sugar into a small saucepan and place over high heat. Stir frequently to help the sugar dissolve and bring to a boil. Once it is boiling, the sugar has completely dissolved – remove from heat and let cool before using in your cocktail. Store the leftover syrup in a bottle or jar and keep refrigerated for about 1 month. (Or you can just buy it at the store, like I do.)
Now, for the strawberry gimlet – muddle the strawberries with the simple syrup in the bottom of your martini shaker. Add the vodka, lime juice and ice. Shake well and strain into a martini glass or high ball glass and garnish with mint.
For a different but equally delicious variation, place the strawberries, simple syrup, vodka, lime juice and ice into a blender and blend all together for a frozen gimlet – don’t forget to garnish with your mint!
