Easy Peasy Desserts Even I Can’t Screw Up

Ever watch Food Network and see those chefs that whip up a four course meal in 30 minutes? Have a next door neighbor who makes roasted brussel sprouts and tuna tartare for her family for dinner? Or your girlfriend who tells you she made tofu burgers with alfalfa sprouts and her kids “cannot get enough”?

Yeah, that’s not me. At our house on any given night, you might find such exotic cuisine as macaroni n’ cheese, chicken nuggets or peanut butter and jelly sandwiches (I know, It’s really highbrow stuff).

Admittedly, I am not a good cook nor am I a big fan of cooking (I can even mess up scrambled eggs for crying out loud!). I have lots of positive attributes, but being a good cook is not one of them. However, I do have a sweet tooth so I will bake the heck out of some desserts. As a mom with two little boys under age four, I don’t have a lot of free time on my hands for labor intensive desserts. So, I am all over any recipe that 1) tastes yummy 2) is quick to make and 3) is a dessert.

Here are a couple of pies that are super easy to make. So easy, in fact, that even I cannot mess them up.

Peanut Butter Pie

Mix together a small tub of Cool Whip (thawed), 8oz of cream cheese (softened) and 1 cup of creamy peanut butter. Place in a ready-made pie graham cracker crust. Done (see, I told you it was easy)! If you would like to make it look super fancy, you can squeeze some chocolate syrup on top and swirl with a knife. Be sure to refrigerate.

For those of you who are allergic to peanut butter and would like something else, I offer another easy pie recipe. I say “those of you allergic,” because that can be the only reason you wouldn’t eat peanut butter. People who actually don’t like peanut butter?! Inconceivable!


Chocolate Pie

Mix together a small packet of instant chocolate pudding and small tub of Cool Whip (thawed). Place in ready-made pie graham cracker crust. Done! Again, if you want to make it look extra fancy, you can add a few chocolate chips for garnish. Also, needs to be refrigerated.

When picking up your supplies, you can use name brand items or store brand items (I use the store brand and they are just as yummy). For those of you worried about calories, you can always opt for the low-fat or fat-free cream cheese and/or Cool Whip (or only have one slice instead of half of the pie. Ahem.).

So, there you have it! Two quick and easy desserts your family will love.
