We all know the holidays are the time of year when we’re on a baking frenzy. Moms, you know what I’m talking about. You’re baking cookies, cakes, pies, and anything else you can think of for family, friends, kids, and co-workers. I know it’s great to keep traditions alive by making the same recipes each year, but sometimes you just get the urge to switch it up.
For Thanksgiving and Christmas I usually make cheesecakes for my family. I make the traditional New York style cheesecake. I’m originally from New York, so of course it would be my favorite cheesecake. This year I’m trying to go back to my Puerto Rican roots, so I decided to switch up our cheesecake and make a Dulce De Leche Cheesecake.
I’m happy to say I made the right choice as it came out better than I could have imagined. This cheesecake was such a big hit with my family and friends that I’ve now replaced our New York Cheesecake with it. It’s going to me our new holiday dessert going forward.
Here is our Dulce De Leche Cheesecake Recipe for you to enjoy during this festive holiday baking season. I hope you love it just as much as we do.
1 Ready Made Graham Cracker Pie Crust
2.5 packages of cream cheese, softened at room temperature (8 ounces each)
1 cup and 1 tablespoons sugar
1/3 cup 2% milk
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
3 eggs, lightly beaten
1 can of dulce de leche (You will use a ¾ of a cup for the cheesecake batter)
Preheat oven to 350°.
In your mixer on low, beat cream cheese, dulce de leche and sugar until almost smooth. Then pour in the milk, flour and vanilla until entire batter is completely smooth.
Add eggs one at a time as you beat on low speed. Once the mixture is smooth, Pour batter into Ready Made Graham Cracker Pie Crust.
Place in Oven and Bake for 60 minutes or until the top of the cake appears dull.
Pour the left over dulce de leche into a microwave-safe bowl and microwave for 40 seconds until softened. You will drizzle this over the cheesecake when it’s done.
Once cheesecake is done, let it cool for 30 minutes.
You can let it cool over night or serve immediately. It tastes fantastic paired with a fresh whipped cream.
