Let me get this straight. There’s dark chocolate, booze, and this is all mixed up in a sweet chocolate pudding? Hell yeah! This pudding is pretty rich, but it’s hard to stop eating. After you’re done, you’ll be able to fly around the room from your sugar and booze buzz.
If you’re making this for a holiday, make sure to have the bottle of bourbon handy at all times so you can deal with those crazy family members. Oh, you have a bourbon bottle beside you at all times anyway? Very smart! Enjoy!
- 11 ounces dark chocolate
- 1/2 cup coffee
- 2 teaspoons bourbon
- 1 cup heavy cream
- 1 teaspoon sea salt
- 1/4 cup pistachios, shells removed and finely chopped
Chop chocolate and add to a medium saucepan. Add in the hot coffee and bourbon and whisk the chocolate until smooth. Add the heavy cream and bring to a boil while whisking. Remove from heat and stir until dissolved and smooth. Add the sea salt.
Pour into 4 six ounce ramekins and place in the refrigerator for a few hours to set. You can also use a medium sized bowl for the pudding and scoop it out for your guests. Once set, remove and sprinkle on pistachios. Serve.
