Cinnamon Roll Cookies

These cookies are bliss – they’re bursting with the flavors of cinnamon and sugar. I thought making them may be too time consuming but I breezed right through and had fun. The real fun comes when you can sit down and enjoy one or three of these cookies.

Cookie dough
2 cups all-purpose flour
1/4 teaspoon salt
1 cup butter, room temperature
1/2 cup confectionery sugar
1 teaspoon vanilla extract

Cinnamon sugar mixture
2 cups granulated sugar
2 tablespoons of cinnamon

1 cup confectionery sugar
milk to make a thin consistency
1 tablespoon of softened butter

Mix all dough ingredients in a heavy duty mixing bowl, until a soft ball forms. On a floured board, roll into short 3 inch ropes, roll the ropes into the cinnamon and sugar mixture. Roll the rope into rounded circles. Bake at 350 F for 9-11 minutes, or until brown.

In a bowl mix sugar, butter, and a little milk beat till smooth. Continue adding milk for spreading consistency to be thin. Place cookies on parchment paper, drizzle a teaspoon of frosting on each cookie. Let dry. Store in an airtight container. Depending on the size, it should make approx. 40 cookies.
